first ignore the 18N and 36N on your coordinates. The latitude(north-south) have nothing to do with time zones.
So we have 40 East to 40 West. Obviously you are flying from east to west over the Prime Meridian which is considered the centre or 0 degrees. Thats a total of 80 Degrees travelled.
The world is 360 degrees around and it is divided into 24 timezones of one hour each. Take 360 degrees and divide by 24 and you get 15 degrees. So now we know that every time zone or an hour difference is equal to 15 degrees of movement on globe. Remember this, it will come in handy at some point in your life.
Since you actually travelled 80 degrees in total: take 80 degrees and divide it by 15 degrees you get 5.333333.
This is how many hours difference there is from 40E to 40W. Simplified thats 5 hours and 20 minutes (.3333 x 60 = 20min).
Because the sun travels east to west; when it was 2 pm at 18N 40E, it was actually 8:40 am, earlier on the same day at 36N 40W .
